Eggs are usually covered with a thin layer that protects them from the penetration of microbes and other harmful elements. This layer has an important role in preserving the quality of the egg and preventing its contamination. When the egg is washed with water, this protective layer can be destroyed. As a result, bacteria from the environment can get inside the egg, increasing the risk of infection. It is especially dangerous to wash eggs with water at room temperature, as this can lead to rapid growth of bacteria. Water can also penetrate into the pores of the shell, which creates favorable conditions for the reproduction of pathogenic microorganisms. One of the most common bacteria found on the surface of eggs is Salmonella, which can cause severe food poisoning. There is a study that confirms that washing eggs can increase the chance of bacteria getting into the contents. Scientists note that after washing eggs, they should be thoroughly dried, but even this does not guarantee complete safety. Therefore, to reduce the risk, it is better not to wash eggs before cooking, but to do it only before using them, if there is such a need. In addition, on many farms, eggs sold in stores are already processed to eliminate external contamination and reduce the number of microorganisms. In fact, in most countries, eggs are sold already thoroughly cleaned and do not require additional washing. Washing eggs at home can only increase the risk of their contamination, so it is better to abandon this practice. If you do decide to wash the eggs before use, it is important to remember a few rules. Use warm water, but not hot water, so as not to damage the shell. Even so, however, care must be taken not to rely solely on washing as a way to ensure food safety.
